After your trip to Sicily, you’ll probably want to impress your friends and family by cooking up some delicious, perhaps quick and easy, recipe. Ttattà, as they say around here. The secret is to have top-quality ingredients. You have no excuses: there are plenty of Sicilian companies that sell their products throughout in the world.

In Sicily, autumn cuisine is all about fresh mushrooms. Here are some ideas on how to cook delicious dishes.

MARINATED RAW MUSHROOMS.
Estimated preparation time: 3 min. Take the mushrooms, clean them, slice them finely, place them on a tray and pour over a mixture of lemon juice, oil, salt and pepper. If you like, add some parsley, parmesan shavings and rocket.

BREADED FRIED PARASOL MUSHROOMS
Clean the mushroom and separate the cap from the stalk. The cap is then breaded and fried, just like a Milanese-style cutlet. Now you can eat the mushroom as you wish, even making a tasty alternative parmigiana.

TAGLIATELLE WITH PORCINI MUSHROOMS.
Warm some olive oil (or butter) and a clove of crushed garlic in a frying pan. Wash the mushrooms, slice them finely and add them to the pan. Cook the mushrooms for about 10 minutes. If you want, add some tomatoes to the sauce (cherry or Pachino tomatoes would be perfect). Add Salt, pepper and parsley to taste. In the meantime, cook the tagliatelle in a saucepan, drain and then pan-fry with the sauce.

TRUFFLED CHANTERELLES
Estimated preparation time: 20 min. Wash the mushrooms and cut the larger ones in half. Warm some olive oil in a frying pan, add the mushrooms, some chopped garlic and parsley. Stir occasionally and add some chilli, salt and pepper to taste. Close the lid and check from time to time to ensure that they don’t dry out too much. If you like, add some cherry or Pachino tomatoes.
