La tradition veut que le sfincione soit pr\u00e9par\u00e9 pendant la p\u00e9riode de No\u00ebl pour c\u00e9l\u00e9brer des moments importants de l\u2019ann\u00e9e, mais en r\u00e9alit\u00e9, on le trouve \u00e0 toute p\u00e9riode.<\/p>\n<p>La particularit\u00e9 du sfincione de Bagheria est sa <strong>couleur blanche<\/strong>, c&#8217;est-\u00e0-dire l\u2019<strong>absence de sauce tomate<\/strong>. Il en existe deux versions\u00a0: avec le <strong>fromage sicilien typique primosale<\/strong> ou, toujours avec ce fromage, et avec aussi de la <strong>ricotta de brebis<\/strong>.<\/p>\n<p><strong>Pr\u00e9paration:<\/strong><\/p>\n<p>Tamiser les farine sur une planche et ajouter la levure \u00e9miett\u00e9e avec du sucre.<\/p>\n<p>Ajouter un peu d\u2019eau ti\u00e8de, en p\u00e9trissant avec les poings, jusqu\u2019\u00e0 ce que le m\u00e9lange soit compact.<\/p>\n<p>Ajouter de petites doses de sel avec peu d\u2019eau ti\u00e8de. P\u00e9trir en ajoutant petit \u00e0 petit l\u2019huile et retourner la p\u00e2te sur elle-m\u00eame jusqu\u2019\u00e0 ce qu\u2019elle ramollisse. \u00c0 ce stade, des bulles de levage appara\u00eetront. Mettre la p\u00e2te dans un bol huil\u00e9, en marquant la surface avec deux entailles crois\u00e9es et couvrir le bol avec un film avant de le placer dans un endroit ti\u00e8de recouvert d\u2019un chiffon de laine pendant environ deux heures (il doit doubler de volume).<\/p>\n<p>Couper finement l\u2019oignon et le faire ramollir dans beaucoup d\u2019huile et peu d\u2019eau. Il est important que l\u2019oignon soit cuit et non frit. Une fois la cuisson termin\u00e9e, filtrer l\u2019huile et la mettre \u00e0 part.<\/p>\n<p>Dans la m\u00eame huile, toaster la mie \u00e9miett\u00e9e jusqu\u2019\u00e0 la faire dorer, puis la faire refroidir hors de la po\u00eale.<\/p>\n<p>Couper le primosale en tranches pas trop fines. Amalgamer la mie (froide) avec le caciocavallo r\u00e2p\u00e9, un peu de poivre et d\u2019origan.<\/p>\n<p>Lorsque la p\u00e2te aura doubl\u00e9 de volume, la diviser en deux parties \u00e9gales et la mettre dans des plats bien huil\u00e9s.
