D\u00e8s qu&#8217;il est ramolli, ajouter l&#8217;ail et les filets d&#8217;anchois (pr\u00e9alablement d\u00e9barrass\u00e9s des \u00e9pines et rinc\u00e9s) en les faisant fondre \u00e0 feu doux. Ajoutez maintenant l&#8217;<a href=\"\/fr\/ricetta\/estratto-di-pomodoro-lastrattu\/\">extrait de tomate<\/a> et un peu d&#8217;eau chaude (un ou deux verres) et m\u00e9langez. Ajouter les raisins secs conserv\u00e9s un moment dans l&#8217;eau et les pignons de pin. Poivrer au go\u00fbt et cuire environ un quart d&#8217;heure, jusqu&#8217;\u00e0 ce que la sauce soit suffisamment \u00e9paisse.<\/p>\n<p>Pendant ce temps, dans une petite casserole, mettre un peu d&#8217;huile et la chapelure avec du sel et du poivre sur feu doux en remuant avec une cuill\u00e8re en bois jusqu&#8217;\u00e0 ce qu&#8217;elle atteigne une couleur ambr\u00e9e.
