Tan pronto como est\u00e9 marchito, a\u00f1adir los filetes de ajo y anchoa (previamente despinados y enjuagados), derriti\u00e9ndolos a fuego lento. Ahora a\u00f1ade el <a href=\"\/es\/ricetta\/estratto-di-pomodoro-lastrattu\/\">extracto de tomate<\/a> y un poco de agua caliente (uno o dos vasos) y mezcla. A\u00f1adir las pasas, conservadas un rato en agua y los pi\u00f1ones. Sazone con pimienta al gusto y cocine durante aproximadamente un cuarto de hora, hasta que la salsa est\u00e9 lo suficientemente espesa.<\/p>\n<p>Mientras tanto, en una cacerola peque\u00f1a, ponemos un poco de aceite y el pan rallado con sal y pimienta a fuego lento, removiendo con una cuchara de madera hasta que adquiera un color \u00e1mbar.
