It is also tradition to eat it on the morning of the feast, as a high-calorie breakfast.<\/p>\n<p><strong>The recipe<\/strong><\/p>\n<p>Procedure:<\/p>\n<p>Boil\u00a0the spleen, lung offcuts and <em>scannarozzato<\/em>. Put them on a plate to cool and cut them into very thin strips.<\/p>\n<p>In the meantime, cut the buns in half.<\/p>\n<p>In a large pan, add the previously boiled the pieces of offal to the lard to flavour them, for around 5 minutes.<\/p>\n<p>Next stuff your buns with all the \u00a0fillings, letting the crumbs of the bun absorb the flavour of the cooking fat. They therefore used to boil and\u00a0flavour the spleen, the lung and the <em>scannarozzato<\/em> (the trachea) in the lard, which, together with cheese,\u00a0served as filling for the sandwiches\u00a0they\u00a0sold to the locals.
