{"id":4005,"date":"2015-10-30T19:04:59","date_gmt":"2015-10-30T18:04:59","guid":{"rendered":"http:\/\/www.visitsicily.info\/?p=4005"},"modified":"2022-06-10T17:09:13","modified_gmt":"2022-06-10T15:09:13","slug":"panelle-e-cazzilli","status":"publish","type":"ricetta","link":"https:\/\/www.visitsicily.info\/en\/ricetta\/panelle-e-cazzilli\/","title":{"rendered":"Panelle e Crocch\u00e9"},"content":{"rendered":"<p><strong>Panelle\u00a0<\/strong><\/p>\n<p>Ingredients\u00a0(for 4):<\/p>\n<ul>\n<li>600g chick-pea flour<\/li>\n<li>olive oil<\/li>\n<li>salt<\/li>\n<li>chopped parsley.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Preparation:<\/p>\n<p style=\"text-align: justify;\">Dissolve the flour in slightly salted water, add parsley to the mixture (there is a version to which you add fennel seeds instead of parsley) simmer stirring with a spoon to get a really soft, lump-free dough. When the dough is ready it comes off the pan sides and you then place it in special wooden moulds to which you add oil, the dough should be reduced to a thickness of half a centimetre. Wait for it to cool and cut it into rectangular shapes. The moulds used by the <em>panellari<\/em> often have their initials engraved in them, to create personalised <em>panelle <\/em>versions<em>.<\/em> The panelle shapes are then fried in pans of boiling oil or lard. When ready, they are placed in the bread with salt, pepper and a few drops of lemon.<\/p>\n<p><strong>Cazzilli or Crocch\u00e8<\/strong> (from the French Croquettes)<\/p>\n<p>Ingredients (for 4):<\/p>\n<ul>\n<li>800g potatoes<\/li>\n<li>100g grated parmesan cheese<\/li>\n<li>3 eggs<\/li>\n<li>1 tablespoon milk<\/li>\n<li>bread crumbs<\/li>\n<li>extra virgin olive oil,<\/li>\n<li>salt, pepper and nutmeg.<\/li>\n<\/ul>\n<p>Preparation:<\/p>\n<p>Peel the potatoes, boil them in salted water and mash with a potato masher. Add 50 grams of grated Parmesan cheese and two eggs to the mixture, a dusting of nutmeg and pepper and then mix. Beat the third egg separately with a tablespoon of milk in one bowl and in a separate one the Parmesan mixed with the breadcrumbs. Create cylindrical croquettes with the potato mixture then coat them first in the egg mixture and then in the breadcrumbs and cheese.
